Cereal with fruits, nuts and seeds - you don't have to add milk. You can also add coconut milk or (haven't tried) oat milk or soy milk I guess, or even fruit juice, if it seems too dry to you.

Warm rice with cinnamon (and perhaps some fruits and honey and coconut) is also quite nice, especially in this cold season.

Porridge can also be prepared with milk-substitutes.

The all powerful omelet.

Just dump whatever savory leftovers you have at the time on top of some eggs, and fold it over when it's been mostly cooked. I flip mine a couple of times as well to make sure it's fully cooked.
